You can never go wrong with a low carb bread pudding recipe, no matter how amateurish you are in the kitchen, and even if you’ve never had it before.

As you have probably guessed (correctly, at that!), bread pudding is one of my favorite desserts! Why? Because it’s always delicious.

In my experience, no one ever says no to a piece of bread pudding. This low carb bread pudding recipe is made from my favorite keto bread, which I will introduce to you later in this article.

It’s easy to make, and extremely filling, too!

In addition to being keto-friendly and filling, this keto bread pudding with caramel sauce also has the perfect custard-like texture that I adore in a bread pudding.

Keto Bread Options

My first keto bread choice is this wonderful new discovery I’ve made called Sola. Ever since I first tried this keto bread, I already noted it down as the bread of choice for my low-carb bread pudding recipe.

Sola is a moist and flavorful low-carb bread, with 3 grams or less of net carbs. And if you want to make sandwiches possible again, even in the ketogenic diet, you can!

The best thing is, you won’t be able to tell the difference between sola and regular bread! It’s the perfect solution for anyone looking for a keto-friendly or no added sugar bread.

Sola also has 5 grams of protein, 4 grams of fiber, as well as 80 calories or less per slice.

It’s made fresh every week, and it can be stored frozen for up to six months. This bread is simply amazing.

1. Cloud bread.

This is also called the oopsie bread which is very popular with low-carb and keto dieters.

Cloud bread is a protein-rich alternative to regular bread and makes an excellent sandwich base or English muffin replacement.

Cloud bread contains three large eggs, 3 ounces cream cheese, and one-eighth of a teaspoon of sea salt. Cloud bread is a versatile and simple alternative to bread that many people on low-carb diets eat every day.

2. Coconut Flour Flat bread.

This is a soft and light bread alternative. It holds super well together thanks to psyllium husk! This keto bread alternative is 100% gluten free, low carb, vegan, paleo and keto!

It only has 2.4 g net carbs and 66 cal per bread. These are also gluten free, paleo-friendly and egg-less, which makes them vegan.

3. Almond flour loaf.

This low carb almond bread recipe has a texture just like whole-wheat bread and can be baked as a loaf or as rolls.

The almond flour is one of my favorite flours to use in my keto recipes. It’s the most perfect alternative in my experience, in the keto diet.

The Star Of Every Party

This amazing sugar free bread pudding recipe is one of the easiest, most delicious, and filling keto foods.

It’s easy because all you need to do is cut the bread into chunks, add the egg mixture, and then bake for about 25 minutes.

If you even a bit like me, then you’d probably want it straight out of the oven- hot with a scoop of ice cream on top. Yum!

The truth is, there is no right or wrong way to enjoy this low carb bread pudding recipe.

Achieving the Perfect Texture

Before you can enjoy it thoroughly, though, you need to combine your egg mixture well. This includes eggs, almond milk, cinnamon powder, ground nutmeg, vanilla extract, and monkfruit sweetener.

Once you’re done, pour the egg mixture over the cubed bread. Toss the mixture and be sure that you coat the bread well. Pour the prepared bread into the buttered baking pan.

Press the bread to ensure it is fully submerged in the egg mixture. Finally, bake the prepared bread pudding for 25 minutes at 350 degrees or until the egg mixture is set and the top of the bread pudding is slightly brown.

Once you take it out of the oven, you should be able to see the amazing star of your dinner or whatever meal you’re preparing.

Keto Bread Pudding with Caramel Sauce

Topping this keto bread pudding with caramel sauce with this amazingly decadent keto caramel sauce is one of the best decisions I have ever made in my life.

This caramel sauce thickens up beautifully without having to use any special ingredients and it’s ready in just 10 minutes!

If you want to try your hand at making this keto bread pudding with caramel, and therefore this sauce, make sure to use caramel flavor syrup.

You can find this syrup at ChocZero.com. They have new syrup flavors every season but their caramel flavor syrup is a classic that adds the perfect caramel flavor to this sugar free bread pudding recipe.

You can also use this keto caramel sauce as a topping for pancakes or waffles aside from bread pudding. I’ve also used it for keto ice cream sundaes and it’s just perfect.

Ingredients

Bread Pudding:

  • 1 bag Sola Bread Loaf or 16 slices of keto bread
  • 4 Eggs
  • 2 cups Almond Milk
  • 1 tbsp Vanilla extract
  • 1 tbsp Cinnamon Powder

Caramel Sauce:

  • 1/4 cup Unsalted Butter
  • 1/3 cup ChocZero Caramel Syrup
  • 1 cup heavy whipping cream
  • 1 tsp vanilla extract

Instructions

Bread Pudding:

  • Preheat the oven to 350F.

  • In a large bowl, mix 4 eggs, 2 cups of almond milk, 1 tsp of ground cinnamon, ¼ tsp of ground nutmeg, 1 tbsp of vanilla extract, and a ¼ cup of monkfruit sweetener. Whisk until well combined.

  • Cut bread slices into small cubes.

  • Prepare a baking dish with butter and place all bread pieces.

  • Pour egg mixture over bread and mix until fully soaked. Press the bread down before placing it in the oven.

  • Bake for 25 minutes or until set and slightly golden brown.

Caramel Sauce:

  • In a small saucepan, brown unsalted butter over medium heat until the butter is melted and light brown.

  • Mix in ChocZero caramel syrup and heavy cream. Whisk until combined. Let simmer over low heat for about 10 minutes and bubbly.

  • Remove from the heat and stir in the vanilla extract. Let it chill for 10 minutes to reach a thicker consistency. Enjoy!
